Harness the properties of elderberries with this homemade, honey-sweetened elderberry syrup recipe. Elderberries are famous for promoting a healthy immune system, making this syrup essential during the winter months. It’s also great with club soda, added to your favorite cocktail, or drizzled over waffles and pancakes. -2 and 1/2 cups of FruitFast Elderberry concentrate
-1/4 cup honey (you can increase this amount to taste)
-1/4 cup lemon juice
-1 small piece fresh ginger, peeled (optional)
1. In a saucepan, combine all ingredients. Over low heat, bring to a simmer and continue to simmer for about 10-15 minutes, or until desired thickness. Discard ginger.
2. Once cooled, syrup will keep in the refrigerator for up to two weeks, or in the freezer for up to 6 months (pour syrup into ice cube trays for easy dosing).
3. If you plan on canning your syrup, do not let syrup cool. Sterilize all canning equipment, fill a large stock pot or canning pot 2/3 full with water. Place a wire rack or flat colander in the bottom of the pot and put over medium/high heat. Ladle hot syrup into canning jars, leaving 1/8 inch of head space. Wipe jar rims and screw on lids. Process in boiling water for 10 minutes (7, if using smaller jars), then transfer to a wire rack to cool. Check all seals. Any unsealed jars should be refrigerated and used within two weeks.
